Got the end-of-the-month blues? Fret no longer.
You’ll find below one of many recipes I’ve made on a budget. And by budget, I mean two dollars. I don’t guarantee any nutritional value, but you probably won’t starve. I’m sure these will become a regular feature here on anniemaggard.com, because I’m regularly really poor.
Corn ‘n’ Eggs
- 1 can store brand sweet corn (only if on sale for less than .80)
- 3 eggs (don’t buy the organic kind or the brown kind)
- Handful of cheese (if you have it - remember the moldy part CAN be cut off)
- Pinch of salt and pepper (packets from a fast food restaurant are perfectly acceptable)
Scramble eggs in a hot skillet until just underdone. Add corn and cheese, heat through. It might make two servings if you add some filler to it, like water or flour or sawdust.

Notes:
Of course the photos don’t do it justice. I promise, this shit is good.
If you get food stamps or find a dollar on the sidewalk or something, you should add some dried onion flakes.
You will probably like this way more if you are from the South.
Now that I think about it, if you have two dollars, you should probably just buy two cheeseburgers and save yourself the trouble.
